The global food shortage that developed early in the 1970s has drawn attention forcibly to the whole world-wide process of food production, distribution, and consumption. Once the extent of the food crisis was realized, attempts were begun throughout the world to deal with it through increased production, stepped-up research, plans for stockpiling, and so on. One aspect of food supply that has received little attention to date is the fate of a food crop in developing countries from the time it is ready for harvest to the point where it reaches the consumer's table.
